French-Fried Asparagus

INGREDIENTS 1-1/2 pounds fresh asparagus
Salt and pepper
1 egg, beaten
1/2 cup fine cracker crumbs
Shortening for deep frying
PaprikaWash asparagus and drain well. Season with salt and pepper. Dip spears into beaten egg and then into cracker crumbs.
Fry in deep, hot shortening, a few at a time, until browned. Place on absorbent towels to drain. Sprinkle with paprika. Serve hot.
Makes 6 servings
