Chicken Croquettes

INGREDIENTS

2 cups cooked chicken, ground or chopped fine
Pinch of celery salt
1 teaspoon lemon juice
1/8 teaspoon paprika
1 tablespoon parsley
1/4 cup chopped onion, or to taste
Bread crumbs
Eggs, beaten
1 cup White Sauce

WHITE SAUCE

1 tablespoon butter
1 tablespoon flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup milk

Melt butter; then add flour, salt, and pepper and mix well. Gradually add milk, stirring constantly, until thickened.

Combine chicken, seasonings, and white sauce. Shape into croquettes and roll in bread crumbs. Tne roll croquettes in beaten egg, and again in bread crumbs.

Fry in deep fat four about 4 minutes or until browned.
