Cornmeal Drop Biscuits

INGREDIENTS

1-1/3 cups all-purpose flour
1/3 cup yellow cornmeal
1 tablespoon sugar
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup plus 2 tablespoons skim milk
2 tablespoons vegetable oil
1 egg, beaten
Vegetable cooking spray

Combine first 5 ingredients in a large bowl. Combine milk, oil, and egg; add to dry ingredients, stirring just until dry ingredients are moistened.

Drop batter by heaping tablespoons onto a baking sheet coated with cooking spray. Bake at 400 degrees for 12 minutes or until lightly browned. Cool on a wire rack.

Makes 1 dozen biscuits
