Broccoli Rabe with Pine Nuts

INGREDIENTS 6 cups broccoli rabe, about 2 bunches, rinsed and large stems removed
1/2 ounce pine nuts, about 2 tablespoons, toasted
2 medium cloves garlic, minced
2 tablespoons olive oil
1/8 teaspoon black pepper, or to taste
1/8 teaspoon salt, or to tasteIn a large stockpot, boil water. Add broccoli rabe and blanch for 2 minutes. Drain.
In large skillet, heat oil. Add garlic and cook for 1 minutes. Add broccoli rabe and cook 4 minutes. Season to taste with salt and pepper. Add toasted pine nuts. Toss and serve.
NOTE - When I have been unable to find broccoli rabe, I use fresh spinach in its place.
