Old-Fashioned Tomato Soup

If you need to use canned tomatoes from the grocery store, use roasted tomatoes. This will give the soup great flavor.

INGREDIENTS

3 tablespoons flour
1/4 cup butter
4 cups milk
2 cups home-canned tomatoes
1 teaspoon sugar
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon chopped fresh parsley

Heat a large saucepan over medium heat. When hot, add the butter and blend. Blend in the flour, to make a smooth paste.

In another pan, scald the milk and add carefully to the flour and butter mixture, stirring constantly using a whisk, to prevent lumps.

Add tomatoes and simmer for 10 minutes. Add sugar and stir the mixture.

Pour mixture through a strainer and pour into another saucepan. Turn heat to low and simmer for another 10 minutes. Season soup with salt and pepper.

Pour into soup bowls, garnish with parsley, and serve.

NOTE - The soup can be made a day or two ahead of time. Reheat either in a saucepan or microwave.
