Baked Pear Pudding

INGREDIENTS

6 pears, peeled and cored, cut into quarters (you can use canned, if you wish)
4 teaspoons light brown sugar
4 teaspoons water
1 vanilla pod, slit in half and the seeds scraped free
1/2 cup butter
1/2 cup granulated sugar
2 large eggs
1 cup sifted self-rising flour

Preheat oven to 350 degrees.

Put pears, brown sugar, and vanilla seeds into a saucepan with water and simmer for 5 minutes. Place fruit mixture into a well-greased ovenproof casserole.

Beat together the butter and granulated sugar, then beat in the eggs until the mixture is light and fluffy. Then beat in the flour until well combined.

Pour mixture over the pears and bake for about 35 to 45 minutes.

NOTE - This is nice served with a vanilla pudding or custard.
