Herb-Roasted New Potatoes

INGREDIENTS

2 pounds new potatoes
1/2 cup chopped fresh basil
2 tablespoons chopped fresh oregano
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4-1/2-ounces grated Parmesan cheese, or to taste

Preheat oven to 425 degrees. Cut the potatoes into 6 to 8 wedges each.

In a large bowl, combine the basil, oregano, oil, salt and pepper. Add the potatoes and toss to combine.

Place the potatoes in a single layer on a nonstick baking sheet and sprinkle with Parmesan cheese. Bake for 20 to 25 minutes or until tender and golden brown. Sprinkle lightly with additional salt before serving, if desired.
