Gingered Green Beans

INGREDIENTS

1 pound green beans, trimmed
2 tablespoons olive oil
2 green onions, chopped (2 tablespoons)
2 teaspoons chopped, peeled fresh gingerroot
1 tablespoon lemon juice
1 tablespoon Oriental sesame oil

Blanch the green beans in a large saucepan of boiling water for about 2 minutes, or until just tender. Drain and rinse under cold water. Drain well.

Heat a wok or large skillet. Add the olive oil and swirl to coat the pan. When hot, add the green onion and the ginger. Stir-fry for about 10 seconds, or until fragrant.

Add the green beans and stir-fry for 4 to 5 minutes, or until heated through. Add olive oil as necessary, to prevent sticking.

Remove from the heat; drizzle the lemon juice and the Oriental sesame oil over the green beans and toss. Serve immediately.
