Garlic Spinach

INGREDIENTS 2 tablespoons olive oil
10 cloves garlic, puréed
1 tablespoon butter
1-1/2 pounds spinach, trimmed
Juice of 1/2 lemon
Salt and pepper, to taste
Pinch of freshly ground nutmegPurée garlic and olive oil in a food processor or with a hand blender.
Heat garlic/oil mixture in a large skillet over low heat; add spinach and cook until just wilted, about 5 minutes.
Remove from heat, sprinkle with salt, pepper, nutmeg, and lemon juice; toss well.
