Chicken Cacciatore

INGREDIENTS

1 whole chicken, cut up, remove skin
1 large onion, sliced
2 cloves garlic, chopped
1 large green pepper, sliced
1/2 pound fresh mushrooms, sliced
1-1/2 cups peeled, crushed tomatoes
1/2 cup white wine
Olive oil
2 bay leaves
1/4 teaspoon dried oregano
Fresh basil leaves
1 teaspoon sugar
Salt and pepper, to taste

Sauté the onion and garlic in olive oil in a hot frying pan. Add chicken. Sauté for 5 minutes or until lightly brown on each side. Add all remaining ingredients.

Cover and cook on medium-low heat for about 1 hour, stirring occasionally until chicken is tender.

Serve with a side dish of pasta and a fresh green salad.
