Baked Potatoes with Sour Cream and Chives

Try substituting fresh dill for the chives. It's equally as delicious.
INGREDIENTS
4 large baking potatoes, scrubbed
1 teaspoon salt
1/2 teaspoon black pepper
1 cup sour cream or plain yogurt
1/4 cup snipped fresh chivesPreheat oven to 425 degrees. Pierce potatoes deeply with sharp fork to allow steam to escape as they bake (this makes them fluffy)
Place potatoes, not touching, directly on middle oven rack and bake 1 hour or until tender.
Score tops of potatoes with "X's", then pinch potatoes gently to force flesh up. Sprinkle with salt and pepper, then top with sour cream and chives, dividing all amounts evenly. Serve at once.
