Potato Pancakes

INGREDIENTS 2 cups raw, grated potatoes
2 eggs, separated
1/8 teaspoon baking powder
1 teaspoon salt
1 tablespoon flour
1/4 cup shorteningPeel potatoes and soak in cold water for several hours. Grate and then drain well, so that all the starch is removed.
Beat egg yolks, stir into potatoes. Mix baking powder, salt and flour together and stir into potato-egg mixture. Beat egg whites until stiff and fold into potatoes.
Heat shortening in a heavy skillet until very hot. Drop potato mixture by spoonfuls into the hot shortening and fry until golden brown. Turn and brown on other side.
Makes 6 servings
