Chili Con Carne

INGREDIENTS 3 pounds round steak
2 teaspoons salt
1/4 teaspoon pepper
3 tablespoons all-purpose flour
3 tablespoons butter, or use half bacon fat
3 cloves garlic
4 medium onions, chopped
2-1/4 cups canned tomatoes
5 to 6 tablespoons chili powder*
2-1/4 cups chili beansSeason meat with salt and pepper; cut into small cubes, about 3/4 to 1-inch in size and dust with flour.
Brown in butter with garlic; remove garlic, add onions and cook until they are transparent, about 5 minutes. Add tomatoes and enough water to cover meat; mix the chili powder to a paste with a little water (to prevent lumping) and add. Simmer, uncovered, for at least 4 hours, stirring in small amounts of water when necessary. Add kidney beans and heat about 5 minutes longer. (Longer cooking and overnight standing will improve flavors.) Serve with side dishes of shredded Cheddar cheese and finely minced green onions.
*NOTE - The strength of chili powder varies greatly with different brands, and will weaken with age. The above recipe is for a very hot chili, so you may wish to use less chili powder if you prefer your food milder.
