Baked Broccoli

INGREDIENTS

1/2 pound mushrooms, sliced, optional
1/4 cup butter
1/4 cup flour
1 teaspoon salt
3 (10-ounce) packages frozen broccoli spears
1 (8-ounce) can tomato paste
1 chicken bouillon cube
2 tablespoons grated Cheddar cheese

Sauté mushrooms in butter for about 5 minutes. Blend in flour and salt.

Cook broccoli until about half done; drain and save liquids. Mix tomato paste with 2 cans of the broccoli liquid and gradually blend into butter and flour mixture, stirring constantly and cooking until smooth and thickened. Add bouillon cube and stir until dissolved. Stir in cheese.

Place broccoli spears in a large, greased baking dish; cover with the sauce. Bake in a moderate 350 degree oven for about 30 minutes.
