Sunrise Blueberry Coffee Cake

INGREDIENTS

BATTER

1-1/4 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup milk
3 tablespoons Crisco Oil
1 egg, well beaten
1/2 teaspoon vanilla

TOPPING

1-1/2 cups fresh or frozen blueberries
2 tablespoons sugar
1/2 teaspoon cinnamon
2 tablespoons chopped pecans

Heat oven to 350 degrees. Oil 8-inch square pan lightly.

FOR BATTER - Combine flour, sugar, baking powder, cinnamon, and salt in medium bowl. Make a well in center.

Combine milk, Crisco Oil, egg and vanilla. Add all at once to flour mixture. Stir just until dry ingredients are moistened. Pour batter into pan.

FOR TOPPING - Spread blueberries over top of batter. Combine sugar and cinnamon. Spoon over blueberries. Sprinkle with nuts.

Bake at 350 degrees for 40 minutes or until toothpick inserted in cener comes out clean.

Makes 9 servings
