Skillet Snow Peas

INGREDIENTS

2 pounds fresh snow pea pods
4 green onions, chopped
2 cloves garlic, minced
4 tablespoons soy sauce
1/2 teaspoon freshly ground pepper
4 tablespoons olive or vegetable oil

Wash snow pea pods; trim ends, and remove any tough strings.

Sauté snow peas and next 4 ingredients in hot oil just until crisp-tender.

Makes 6 hearty servings

NOTE - Just at the end of cooking, I add a drop or two of sesame seed oil to the skillet and toss the snow peas just before serving.
