Orange Almond Trout

INGREDIENTS

1 pound trout fillets
1/4 cup sliced almonds
1 medium onion, sliced
1/4 cup butter or margarine
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon paprika
1/8 teaspoon pepper
2 oranges, pared and sectioned

If fish fillets are large, cut into 5 serving pieces.

Cook and stir almonds and onion in butter in 10-inch skillet until onion is tender; remove with slotted spoon and keep warm.

Mix flour, salt, paprika and pepper. Coat fish with flour mixture. Cook fish in same skillet over medium heat, turning carefully, until brown, about 10 minutes. Top with almonds and onions; garnish with orange sections.

Serves 5
