Herbed Basmati Rice

This recipe also goes well with pork tenderloin.

INGREDIENTS

1 tablespoon margarine
1 large clove garlic, minced
3/4 cup basmati rice, uncooked
1-1/2 cups water
1/2 teaspoon salt
3 tablespoons thinly sliced green onion tops
1 tablespoon minced fresh basil
1-1/2 teaspoons minced fresh thyme
3 tablespoons freshly grated Parmesan cheese

Melt margarine in a small saucepan over medium-high heat. Add garlic, and sauté 1 minute. Add rice; stir well. Add water and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.

Stir in onion tops, basil, thyme, and sprinkle with cheese.

Makes 4 servings
