Meat Loaf with Herbs

INGREDIENTS

1 tablespoon butter
4 tablespoons finely chopped onions
1 teaspoon minced garlic
2 pounds ground beef
1-1/2 cups fine, fresh bread crumbs
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon Tabasco sauce
1/4 teaspoon ground cumin
Salt and freshly ground black pepper, to taste
4 tablespoons chopped fresh herbs (parsley, dill or coriander, or combination)
1/2 cup plain yogurt, drained in cheesecloth or strainer Preheat oven to 425 degrees.

Heat the butter in a small skillet. Add the onions and garlic and cook until the onions are wilted. Cool briefly.

In a bowl combine the beef, bread crumbs, nutmeg, Tabasco, cumin, salt and pepper to taste. Add the onion mixture and herbs of choice. Stir in the yogurt and blend well. Pack the mixture into a loaf pan, about 9-1/4 x 5-1/4 x 2-3/4-inches. Smooth over the top with a spatula.

Place the loaf pan in a baking dish and pour boiling water around the pan to a depth of about 1-1/2 inches. Bake for 45 minutes.

Remove from water bath and let rest in a warm place for about 15 minutes before serving. Serve the loaf with the natural juices or gravy of choice.

Makes 4 to 6 servings
