Apple Fritters

These homey fritters are equally delicious and extra crunchy dredged in granulated sugar rather than dusted with confectioners' sugar. If you are serving the fritters to children, substitute water for the wine in the batter.
INGREDIENTS
1 cup unbleached all-purpose flour
1/8 teaspoon salt
1 teaspoon baking powder
1 egg
1/2 cup dry white wine, plus extra if needed
2 Granny Smith apples, peeled, corned, and cut into 1/2-inch-thick slices
1 lemon, halved
3 cups peanut oil
1/2 cup confectioners' sugarSift the flour, salt and baking powder together into a large bowl. Beat in the egg and enough wine to make a smooth, pancake-like batter; you may not need all of the wine (add more wine if needed to thin out the batter). Set aside for 30 minutes. Place the apple slices in a bowl of water and squeeze the lemon into the water to prevent browning.
Heat the oil in a shallow 10-inch pan until it registers 375 degrees. Dry the apple slices on kitchen paper and then dip a few at a time into the batter. Fry them until they are golden and puffed, about 2 minutes per side, turning once. Remove with a slotted spoon to a platter lined with paper towels and gently blot them dry. Continue in the same manner with the remaining apple slices and batter. Sprinkle the apple fritters with the confectioners' sugar and serve hot.
