Romaine Salad with Tangy Lemon-Dijon Dressing

INGREDIENTS 1/4 cup water
3 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
2 teaspoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, minced
8 cups torn romaine lettuce
1/4 cup finely chopped red onion
1/4 cup plus 2 tablespoons plain croutons
Cracked pepper, optionalCombine first 7 ingredients in a small bowl, stirring with a wire whisk until well-blended.
Combine lettuce and onions in a bowl. Drizzle dressing over salad; toss well. Top with croutons. Sprinkle with cracked pepper, if desired.
