Lemon Broccolini

INGREDIENTS 1-1/2 pounds broccolini*
1 cup water
4 strips lemon peel
Salt, to tastePlace broccolini in a skillet. Add water and tuck lemon peels in and around the broccolini. Cover and bring to a boil, then add a little salt. Keep covered and cook broccolini until tender, 6 to 7 minutes. Drain and serve.

*NOTE - Broccolini or Baby Broccoli - If you’re looking for a milder broccoli, try broccolini. It’s a cross between broccoli and Chinese kale. You’ll find it’s more tender than broccoli. The stalks do not need to be peeled. Broccolini has a sweet, delicate flavor with a subtle, peppery "edge", and the flavor is milder and sweeter when cooked. It is completely edible, from flower to stem, and it's texture is less fibrous than either broccoli or asparagus.
