Honey Glazed Carrots

INGREDIENTS

4 cups carrots, diagonally sliced
1 cup water
1/4 teaspoon salt
2 teaspoons cornstarch
1/2 teaspoon grated orange peel
1/2 cup orange juice
2 tablespoons butter
2 tablespoons honey
Parsley, optional

Combine carrots, water and salt in a medium saucepan. Heat to boiling. Cook, covered, on medium heat until just tender.

Combine cornstarch, orange peel, and orange juice in a small pan. Stir well. Place on medium heat; add butter and honey. Stir constantly until thickened and clear.

Drain carrots. Add honey glaze and mix well. Sprinkle with parsley, if desired.

Makes 6 servings
