Glazed Sweet Potatoes

Although this recipe is for 2 only, it is easily increased for whatever amount needed.
INGREDIENTS
1 large sweet potato (about 3/4 pound)
2 tablespoons butter
2 tablespoons brown sugar
2 tablespoons flaked coconut
2 tablespoons maple syrup
2 tablespoons slivered almonds, toastedPeel potato; cut into 1/3-inch slices. Arrange in a large skillet; cover with water, and bring to a boil.
Cover, reduce heat, and simmer 10 minutes or until tender. Drain potatoes, remove from skillet, and set aside.
Melt butter in skillet; stir in brown sugar, coconut, and syrup. Return potatoes to skillet, and cook until thoroughly heated; turn potatoes to coat with mixture.
Arrange potatoes in a serving dish; sprinkle with almonds.
