Fried Zucchini Spears

INGREDIENTS 3 medium-size zucchini (1-pound)
1 tablespoon plus 1 teaspoon olive oil
1/2 teaspoon grated lemon zest, yellow part of rind only
1 clove garlic, finely chopped
1 tablespoon dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon freshly ground pepperHalve the zucchini lengthwise. Cut each half in half crosswise, then cut each piece lengthwise into 4 wedge-shaped sticks.
Sauté the zucchini in 1 tablespoon of the oil in a large skillet just until the zucchini is crisply tender, for 3 to 4 minutes. Remove the zucchini.
Add the remaining teaspoon of oil to the skillet. Add the lemon zest and the garlic to the skillet and sauté, stirring for 30 seconds. Stir in the bread crumbs and the zucchini, and sauté for 15 seconds to heat through.
Transfer the zucchini mixture to a serving platter. Season with the salt and pepper, and serve.
