Fried Whiting Fillets with Garlic and Rosemary

INGREDIENTS

4 whiting fillets
Salt and freshly ground black pepper
Olive oil for frying
All-purpose flour
2 cloves garlic, crushed
2 teaspoons fresh rosemary
1/2 cup light red wine vinegar

Coat the fillets in flour and shake off any excess. Pour the olive oil into a heavy-based frying pan. Add the fish and cook quickly until brown - about 2 minutes on each side. Remove and keep warm.

Drain the oil from the pan and wipe out any burnt bits. Heat about 2 tablespoons of oil in the pan. Add rosemary and garlic and sauté gently until the garlic is just brown. Remove pan from the heat and add vinegar, shaking the pan. Pour over the fish and serve immediately.

Makes 4 servings
