Fried Sweet Potatoes

INGREDIENTS

5 sweet potatoes, washed, peeled, and sliced like french fries
Peanut oil, for deep frying
Salt, to taste
Ground cayenne pepper, to taste

Half fill a deep fry pot with the oil and heat to 350 degrees. If the potatoes are wet, blot them with paper towels before frying. Use a large cooking spoon to lower the potatoes into the hot oil. Fry until tender, about 4 minutes.

Remove, drain on paper towels, and sprinkle with salt and pepper, or some people like to sprinkle with powdered sugar and ground cinnamon.

Makes about 6 servings
