Beef Stir-Fry with Mushrooms and Peppers

INGREDIENTS 1 tablespoon cornstarch
2 tablespoons soy sauce
4 tablespoons dry sherry
1/2 pound lean steak
1/2 teaspoon sugar
1/2 teaspoon salt
2 tablespoons oil
2 medium onions
1 green pepper
1/2 pound fresh mushroomsThinly slice beef into 1-1/2-inch long strips. Slice onions, peppers, and mushrooms. Mix cornstarch, 1 tablespoon soy sauce, 2 tablespoons sherry in bowl and add to meat. Stir to coat and set aside to marinate at least 15 minutes.
Stir remaining soy sauce, sherry, sugar and salt and set aside. Heat oil in uncovered wok to 375 degrees. Add onion, pepper and mushrooms and stir-fry for 2 minutes. Add beef and soy mixture and stir-fry for 2 minutes. Serve with white rice.
LYNNE'S NOTES - I add minced fresh ginger root and garlic to my marinade mix. The beef is easier to slice when partially frozen.
