Stewed Tomatoes

INGREDIENTS

4 tablespoons butter
1/2 cup chopped onion
1/4 cup finely chopped celery
1/4 cup chopped fresh parsley
1 (16-ounce) can whole tomatoes, cubed with juices
2 slices stale bread or toast, crumbled or cubed
Salt and pepper, to taste
*Sugar

In a large saucepan over medium-high heat, melt the butter and sauté the onions, celery, and parsley until the onions are tender. Add the tomatoes, with their juices, and reduce the heat to low. Simmer for 5 minutes. Add the bread and mix well. Season with salt and pepper to taste, and simmer 15 more minutes to remove any extra juice.

Makes 4 to 6 servings

NOTE: *Depending on when the tomatoes were canned, they are often tart. As the tomatoes cook, taste and if necessary, add sugar to desired taste. My family prefers them a little sweet.
