Spaghetti and Meatballs

INGREDIENTS

1 small yellow onion, finely chopped (about 1/3 cup)
2 large cloves garlic, minced
1 tablespoon olive oil
3 eggs, beaten
1-1/2 cups soft bread crumbs
1/2 cup fresh grated Parmesan cheese
1/4 cup finely snipped fresh Italian flat-leaf parsley
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon crushed red pepper, optional
2 pounds lean ground beef
1/2 pound sweet Italian sausage, casings removed if present
1 pound dry spaghetti
4 cups homemade or purchased spaghetti sauce, warmed
Fresh grated Parmesan cheese

In a small saucepan cook onion and garlic in hot oil, stirring frequently, for 4 to 5 minutes or until tender. Remove from heat and set aside.

In a very large mixing bowl combine beaten eggs, bread crumbs, the 1/2 cup Parmesan cheese, the parsley, salt, black pepper, and red pepper, if desired. Add ground beef, sausage, and onion mixture; mix well.

Form mixture into forty 2-inch rounds (shape by hand or use a small ice-cream scoop). Arrange meatballs in an ungreased 15 x 10 x 1-inch baking pan. Bake, uncovered, in a 350 degree oven for 25 to 30 minutes or until 160 degrees in center. Drain on paper towels.

To serve, cook spaghetii according to package directions; drain thoroughly and place on a large serving platter. Top with meatballs. Pour warmed spaghetti sauce over pasta and meatballs. Pass additional grated cheese at the table.
