Parsley Potatoes

INGREDIENTS 8 small red potatoes
1/2 cup fresh parsley
2 quarts water
1 cup diced onions
1 tablespoon chicken base
Salt and pepper, to taste
1 tablespoon softened butter and 1 tablespoon minced garlic, mixed together
Wash potatoes and parsley. Chop parsley, removing any tough stems, and place in a large saucepan. Add water, potatoes, onions, chicken base, salt and pepper. Cover and bring to a boil on high heat.
When boiling, remove lid and boil 20 to 25 minutes, or until tender when pierced with a fork.
Drain potatoes and return to pan. Stir in butter and serve.
