Mixed Greens Salad with Thousand Island Dressing

I can still taste my Gram's Poke Salad - Yum!... But, you can't always find or get poke greens. This recipes provides an alternative to it.

INGREDIENTS

1 (10-ounce) package raw spinach, torn into bite-sized pieces
1 pound raw mustard greens, torn into bite-sized pieces
1 cup chopped watercress
1 cup chopped onion
4 slices turkey or regular bacon, cooked and crumbled

Wash greens and pat dry.

Combine greens, onion, and bacon in a salad bowl. Toss well. Serve with Thousand Island Dressing or Dressing of your choice. (Italian is also nice).

THOUSAND ISLAND DRESSING

1 cup nonfat sour cream
1 cup chili sauce
1/4 cup sweet pickle relish, well drained
1 tablespoon oil, vegetable or olive oil
1/2 cup sliced green onions
1/2 cup chopped celery
1 hard-cooked eggs, finely chopped

Combine sour cream, chili sauce, pickle relish, oil, green onions, celery and hard-cooked egg. Stir with fork to blend. Cover. Refrigerate until ready to use. Stir again just before serving.
