Macaroni and Cheese with Sour Cream

INGREDIENTS

3 cups macaroni
3 large eggs
1 cup sour cream
2 cups evaporated milk
8-ounces Velveeta Cheese
1-1/2 cups mild Cheddar cheese
1-1/2 cups Monterey Jack cheese
Salt and black pepper, to taste
1/4 cup butter

Preheat oven to 350 degrees.

Bring a large pot of lightly salted water to a boil. Add macaroni and stir occasionally until tender. Drain and rinse. Add butter to macaroni.

In a bowl, mix sour cream, eggs, and milk. Stir into macaroni. Cut Velveeta cheese in small pieces; add to macaroni. Grate Cheddar and Jack cheeses. Remove 1/2 cup of each and set aside.

Combine the remaining cheese in with the macaroni. Pour into buttered baking dish; sprinkle with remaining cheese on top.

Bake in preheated 350 degree oven for about 40 to 45 minutes.
