Italian Patty Melts

INGREDIENTS 1 tablespoon extra-virgin olive oil
4 Italian sweet sausage patties, 1/4-pound each
1 cubanelle, sweet Italian pepper, seeded and sliced
1 medium onion, sliced
Salt and freshly ground black pepper, to taste
8 slices sliced Italian bread
8 deli slices provolone cheeseHeat a nonstick skillet over medium-high heat. Drizzle the pan with the olive oil and add sausage patties; cook 5 minutes on each side. Remove from the pan and keep warm. Add another tablespoon olive oil to the pan and add the peppers and onions. Season with salt and pepper and cook until the peppers and onions are just tender, about 5 minutes. Remove them from the pan.
Wipe the pan clean and reduce heat to medium-low. Assemble the sandwiches; place 4 slices bread on a work surface, top each with 1/4 of the peppers and onions, then a slice of cheese, a sausage patty, another slice of cheese, and another slice of bread.
Add butter to skillet and cook patty melts until golden and cheese is melted, 2 to 3 minutes on each side. Press with spatula as they cook or set another heavy skillet on top to weigh them down.
Cut in half and serve.
