Broccoli with Garlic

When sautéing the garlic, be careful not to overbrown it, as this will make the dish bitter.

INGREDIENTS

1 head broccoli, about 1-1/2 pounds
1-1/2 tablespoons olive oil
1 clove garlic, finely chopped
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper

Bring a large pot of water to boiling over high heat.

Peel the broccoli stems. Cut the stems lengthwise into long, thin strips so each has a floweret or two at the top. Drop them into the boiling water. Cook for 3 minutes, or just until the broccoli is crisp-tender. Drain the broccoli.

Heat the oil in a large, heavy skillet over medium heat. Add the garlic and cook for 1 minutes, or until the garlic is lightly golden. Add the broccoli and toss until it is coated and hot. Sprinkle with the salt and the pepper, to taste.

Makes 4 servings
