Banana Coffee Cake with Orange Glaze

This old-fashioned favorite quick bread is delicious dressed up with a citrus glaze.

INGREDIENTS

3 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 beaten eggs
2 cups mashed banana (5 to 6 medium bananas)
1-1/2 cups sugar
3/4 cup cooking oil
1-1/2 teaspoons finely shredded lemon peel
1/2 cup chopped walnuts
Orange Glaze
Dried apricot halves

Preheat oven to 350 degrees. Lightly grease a 10-inch fluted tube pan; set aside.

In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the center of the dry mixture; set aside.

In another large bowl combine eggs, banana, sugar, oil, and lemon peel. Add egg mixture all at once to dry mixture. Stir just until moistened, batter should be lumpy. Fold in nuts.

Spoon batter into prepared pan. Bake at 350 degrees for 45 to 50 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight.

To serve, drizzle with Orange Glaze and top with dried apricot halves, if desired.

Makes 16 servings

ORANGE GLAZE

In a small bowl stir together 1-1/2 cups sifted powdered sugar and 2 tablespoons orange juice. Add enough juice, 1 teaspoon at a time, to make glaze of drizzling consistency.
