Oven "Boiled" Dinner

INGREDIENTS

2 large baking potatoes
4 medium carrots
1 (1-pound) head cabbage
4 knockwurst
1-1/4 cups apple juice
1/2 teaspoon caraway seed
2 Granny Smith apples
1 tablespoon all-purpose flour
2 teaspoons brown mustard
1/2 teaspoon prepared horseradish

Preheat oven to 375 degrees. Scrub and quarter potatoes. Pare carrots. Wash and quarter cabbage. Prick skin of knockwurst, or slash several times.

Arrange potatoes, carrots, cabbage, and knockwurst in a large shallow casserole or roasting pan. Pour 1 cup apple juice over all. Sprinkle with caraway seed. Cover tightly with foil or roasting pan lid.

Bake 35 to 40 minutes, or until potatoes are almost tender.

Meanwhile, wash and quarter apples; remove cores. Place in casserole; bake 15 minutes or until apples are just tender.

Remove vegetables, knockwurst, and apple to a serving platter.

Pour liquid from pan into a small saucepan. Stir flour into the remaining 1/4 cup juice. Stir into pan liquid. Bring to boiling, stirring until thickened. Stir in mustard and horseradish. Pour sauce over "boiled" dinner.
