Macaroni and Cheese

INGREDIENTS

1 (8-ounce) package elbow macaroni
1/4 cup butter
1/4 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
2 cups milk
2 cups grated Cheddar cheese

Preheat oven to 375 degrees. Cook macaroni as directed on label; drain.

Meanwhile, melt butter in a medium saucepan; remove from heat. Stir in the flour, salt, and pepper until smooth. Gradually stir in milk. Bring to boiling, stirring. Reduce heat, and simmer 1 minute.

Stir in 1-1/2 cups cheese and the macaroni. Pour into a 1-1/2 quart casserole, sprinkle with remaining cheese over top.

Bake 15 to 20 minutes, or until cheese is golden brown.
