Lemon Rice

INGREDIENTS 1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon vegetable oil
4 cups water
2 cups uncooked long-grain rice
4 chicken-flavored bouillon cubes
3 tablespoons lemon juice
1/2 cup chopped fresh parsleySauté onion and garlic in oil in a large saucepan until tender. Add water and next 3 ingredients.
Bring to a boil; cover, reduce heat, and simmer 20 minutes or until rice is tender and liquid is absorbed. Stir in parsley.
Makes 8 servings
