Herbed Pea Medley

INGREDIENTS 2 cups shelled green peas
1 cup Sugar Snap peas, trimmed and halved crosswise
1/2 cup diced carrot
1 cup snow pea pods, halved crosswise
2 tablespoons chopped fresh parsley
1 tablespoon finely chopped fresh mint or 1 teaspoon dried mint
1 tablespoon margarine, melted
1 teaspoon grated orange rind
2 teaspoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepperArrange first 3 ingredients in a steamer basket over boiling water. Cover and steam 4 minutes. Add snow peas. Cover; steam 2 additional minutes or until crisp-tender.
Combine parsley and remaining 6 ingredients in a large bowl; stir well. Add vegetable mixture; toss well.
