Grecian Rice

Just about every would-be cook who tasted this recipe wanted to serve it. The Blue Diamond® Almond Company used it in a booklet, but before that it appeared in national advertisements.

INGREDIENTS

3 tablespoons butter or margarine
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
2 cloves garlic, minced or pressed
1 cup long-grain rice
2 cups beef bouillon
1 teaspoon cinnamon
1/2 teaspoon salt
2/3 cup Blue Diamond® Chopped Natural Almonds
1/2 cup dark, seedless raisins

In a large skillet melt butter; sauté onion, green pepper and garlic until barely tender. Add rice and cook, stirring often, until lightly toasted, about 4 to 6 minutes.

Stir in bouillon, cinnamon, and salt; cover and simmer 10 minutes. Stir in almonds and raisins; continue cooking, covered, another 5 minutes or until all liquid is absorbed.
