Dijon Spinach Salad

INGREDIENTS 1 pound fresh spinach, torn
6 slices bacon, cooked and crumbled
2 hard-cooked eggs, chopped
1 cup sliced fresh mushrooms
1/4 cup vegetable oil
1/4 cup olive oil
2 tablespoons lemon juice
1 tablespoon white wine vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepperCombine spinach, crumbled bacon, chopped eggs, and sliced mushrooms in a large salad bowl; toss gently.
Combine vegetable oil and remaining ingredients in a jar; cover tightly and shake vigorously.
Pour dressing over spinach mixture; toss gently, and serve.
