Chicken Cacciatore

INGREDIENTS

1 (3-pound) chicken, cut into eighths
3 to 4 tablespoons flour
1 tablespoon paprika
3 tablespoons oil, divided
4 tablespoons butter, divided
2 medium onions, thinly sliced
1 green pepper, seeded and chopped
1/2 pound mushrooms, sliced
2 cloves garlic, minced
1 (15-ounce) can Italian sauce OR Italian Tomato Sauce
2 tablespoons chopped parsley
1 tablespoon finely chopped dill
1 tablespoon chopped basil
1/2 cup dry red wine, optional

Preheat oven to 350 degrees. Use a 3-quart baking dish with cover.

Combine flour and paprika. Use to dredge chicken pieces.

Brown chicken using 2 tablespoons oil and 2 tablespoons butter. Remove chicken and set aside. Add remaining oil and butter to pan and sauté onions, pepper, mushrooms, and garlic until vegetables are softened, about 5 minutes. Place chicken and vegetables in baking dish; add sauce and seasonings. Cover and bake 1 hour. Remove cover, add wine, if using, and bake an additional 10 minutes.
