Snow Peas with Fresh Shiitakes

INGREDIENTS

2 tablespoons chicken broth
1 tablespoon Shaoxing* wine or medium-dry sherry
1 teaspoon salt
1 teaspoon sugar
5 tablespoons peanut oil
1/4 pound fresh Shiitake mushrooms, thinly sliced
1 pound snow peas, strings removed

Mix broth, wine, salt, and sugar in small ramekin; set aside.

Heat oil in wok or large heavy skillet over high heat until ripples show on pan bottom. Add mushrooms and stir-fry until they wilt and release their juices, 2 to 3 minutes.

Add snow peas and stir-fry 1-1/2 to 2 minutes. Add reserved broth mixture and stir until all liquid evaporates and peas are crisp-tender. Serve at once.

Makes 6 servings

NOTE: - *Shaoxing wine is China's most famous rice wine.
