Orange-Almond Pilaf

INGREDIENTS 1/2 cup chopped green onion
1 clove garlic, minced
1/4 teaspoon dried thyme, crushed
1/4 teaspoon ground cinnamon
1/8 teaspoon pepper
Several dashes ground red pepper, optional
2 tablespoons butter
1 cup long-grain rice
1 (14-1/2-ounce) can beef broth
1 teaspoon finely shredded orange peel
1 cup sliced almonds, toastedIn a medium saucepan cook green onion, garlic, thyme, cinnamon, pepper, and red pepper, if desired, in butter until onion is tender but not brown.
Stir in uncooked rice, beef broth, and orange peel. Simmer, covered, for 15 to 20 minutes or until rice is tender. Stir in 1/2 cup of the almonds. Garnish with remaining almonds.
