Mashed Potatoes

This is an excellent recipe, and I use it often when I want a change.

INGREDIENTS

5 large baking potatoes
6 cloves garlic
1/4 cup butter
1/2 cup chicken stock
1 teaspoon dried rosemary, crushed
Salt and pepper to taste

Peel potatoes and garlic. Cut potatoes into cubes. Add both to boiling water and cook about 25 minutes, or until potatoes are tender. Drain.

Put potatoes and garlic in mixing bowl. Add 1/4 cup butter and 1/2 cup chicken stock, heated. Mix until butter is melted and potatoes smooth. Add 1 teaspoon rosemary, crushed. Add salt and pepper to taste. Mix in bowl until blended.

NOTE - You can eliminate the rosemary, if you wish.
