Favorite Green Salad

INGREDIENTS 1-1/2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
2 teaspoons red wine vinegar
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper
3 tablespoons extra-virgin olive oil
8-ounces mixed baby greens
1/2 cup mixed fresh herbs (chervil, mint, basil, flat-leaf parsley, dill, etc.)
2 medium scallions, thinly sliced
1 avocado, peeled and thinly slicedIn a large bowl, whisk together lemon juice, mustard, vinegar, salt, and pepper. Slowly whisk in olive oil until blended.
Toss dressing with greens, herbs, and scallions. Add avocado slices, and serve.
