Chocolate Surprise Cake

This recipe comes from a book published by General Electric in 1931 - "The Silent Hostess - Treasure Book"

INGREDIENTS

2 dozen lady fingers
1/2 pound sweet cake chocolate
4 tablespoons sugar
4 tablespoons water
4 egg yolks, beaten light
1-1/2 teaspoons vanilla
4 egg whites, beaten light
1 cup cream, whipped

Line a deep round cake pan with waxed paper. Line bottom and sides with lady fingers placed brown side out.

Melt chocolate in double boiler, add sugar, water and egg yolks. Cook until smooth, stirring constantly. Cool; add vanilla and fold in egg whites.

Pour 1/2 of mixture into pan. Put another layer of lady fingers over chocolate mixture and add remaining filling. Cover with waxed paper and place in the refrigerator Cabinet for several hours.

When ready to serve, remove from pan and fill center with whipped cream. Sprinkle with chocolate shot or chopped nuts. Top with red raspberries.
