Broiled Tomato Halves

INGREDIENTS

4 whole ripe tomatoes
1/2 cup fine dry bread crumbs
1/4 teaspoon salt
Few sprinklings of freshly ground black pepper
4 tablespoons melted butter
1 teaspoon finely chopped onion
1 teaspoon finely chopped green pepper

Preheat broiler. Wash tomatoes, remove stem end, and cut in half crosswise.

Combine bread crumbs, salt, and pepper. Dip cut surfaces of tomatoes first in melted butter and then in crumb mixture. Sprinkle tops with onion and green pepper. Place in a shallow pan and broil about 5 inches from source of heat until tender and browned.

Makes 4 servings
