Baked Herb Potatoes

INGREDIENTS 6 baking potatoes
1 teaspoon salt
1 teaspoon pepper
1/4 pound butter
1/2 cup cream
1 tablespoon chopped chives or spring onions
1 tablespoon tarragon
1 teaspoon sweet basil
1 tablespoon chopped parsleyBake potatoes for about 45 minutes to 1 hour in a 450 degree oven, or until done. Let cool enough to handle.
Cut off top third of potatoes and scoop out the insides of the potato into a good-sized bowl. Mash with potato masher until all the lumps are removed.
Add salt, pepper, 1/4 pound butter into the bowl. Work the butter and seasonings into the potatoes. Pour in 1/2 cup cream, little by little. Beat until smooth. (The mixture should be smooth and a little creamy - if necessary, use a little more cream). This mixture must be less firm than the usual "stuffed baked potatoes".
Add chopped chives or spring onions. Mix. Add tarragon and basil. Mix. Add chopped parsley. Mix.
Fill the potato shells with the creamy mixture. Place under the broiler for a few moments to brown very lightly. Serve.
